01.The origin of ‘Terrenove’

Franciacorta began as a true terra nova: a once marshy area that Cluniac monks patiently transformed into fertile, living soil during the Middle Ages.

Canals, orchards and the first vineyards sprang up thanks to their work, shaping a landscape that we now recognise as the cradle of great wines.

The name “Franciacorta”, documented since 1277, derives from “francae curtes”: the monastic courts that were exempt from taxes due to their land reclamation work.
A legacy that tells the story of the essence of this place: a land redeemed, regenerated and reinvented.

02.the process

From the earth to the glass.

Every bottle of Franciacorta is the result of a careful and patient process: from the meticulous manual harvest to the selection of the cuvées, through to bottle ageing and DOCG certification. A journey that transforms grapes into unique sparkling wines, ready to be enjoyed.


Harvest and pressing

The manual harvest, between August and September, brings intact bunches to the winery, where they are gently pressed to obtain a pure must that is stored at a controlled temperature.
 

Cuvée

During spring, the bases are tasted, selected and blended to define the unique style of the cuvée.
 

Tirage and agein

The wine is bottled with sugars and yeasts, starting a second fermentation which, during at least 18 months of rest, creates the bubbles and develops aromatic complexity.
 

Remuage

The bottles are gradually rotated to convey the yeasts into the neck, preparing the wine for the next stage.
 

Disgorging

The yeast deposit is removed by freezing the neck and naturally ejecting the cork under pressure.
 

Bottling and packagin

The level is restored with or without dosage, the sugar content is defined and the bottle is closed with the traditional mushroom-shaped cork and wire cage.
 

Banding

Before sale, each bottle receives the DOCG band that certifies its origin, authenticity and traceability.

03. Wine

Terrenove Brut

The Franciacorta par excellence: a cuvée of Chardonnay and Pinot Noir vinified in white, which perfectly accompanies even the most structured dishes.

Grapes: 80% Chardonnay, 20% Pinot Noir
Harvest: from the second ten days of August to the first ten days of September
Vinification: soft and slow pressing of the grapes with separation of the musts; alcoholic fermentation in steel vats
Ageing: preparation of the cuvée and bottling in the spring following the harvest. Second fermentation in the bottle and ageing on the lees for at least 24 months, followed by a further 3 months after disgorging
Dosage: Brut

 

Organoleptic characteristic

Appearance: soft and creamy mousse, very persistent; fine and continuous perlage.
Colour: straw yellow with green reflections.
Aroma: fresh, elegant and complex; hints of white flowers such as hawthorn and wisteria, with notes of fresh fruit.

Taste: good acidity, balanced structure, persistent; fine and elegant palate.

 

Pairings and service

Perfect for both aperitifs and more structured dishes. Ideal with beef in oil or succulent first courses, where the bubbles balance the richness.
Serving temperature: 6–8 °C

Terrenove Satén

The silkiest and most elegant Franciacorta by definition, perfect as an aperitif and for pairing with lightly structured dishes.

It is a pure Chardonnay that is aged in the bottle for at least 24 months.
 

Grapes: 100% Chardonnay
Harvest: from the second ten days of August to the first ten days of September
Vinification: soft and slow pressing of the grapes with separation of the musts; alcoholic fermentation in steel vats
Ageing: preparation of the cuvée and bottling in the spring following the harvest. Second fermentation in the bottle and ageing on the lees for at least 24 months, followed by another 3 months after disgorging. The lower pressure in the bottle (5 atmospheres) gives the wine softness and silkiness.
Dosage: Brut Satèn

 

Organoleptic characteristic

Appearance: soft and creamy foam, very persistent; fine and continuous perlage.
Colour: straw yellow.
Aroma: rich and elegant; hints of dried fruit, notes of pastry, ripe yellow fruit and candied fruit.
Taste: fresh and savoury, well-structured, delicious and very persistent.

 

Pairings and service

Perfect for aperitifs, with delicate cold cuts and mild cheeses. Interesting with Franciacorta risottos and fish dishes.
Serving temperature: 6–8 °C​

Terrenove Rosé

The maceration of Pinot Noir grape skins for at least one night gives our Rosé an incredible structure.

It is a blend of Pinot Noir and Chardonnay aged in the bottle for a minimum of 24 months.
 

Grapes: 40% Pinot Noir, 60% Chardonnay
Harvest: from the second ten days of August to the first ten days of September
Vinification: soft and slow pressing of the grapes with separation of the musts; maceration of the musts in contact with the Pinot Noir skins for one night; alcoholic fermentation in steel vats
Ageing: preparation of the cuvée and bottling in the spring following the harvest. Second fermentation in the bottle and ageing on the lees for at least 24 months, followed by another 3 months after disgorging.
Dosage: Brut

 

Organoleptic characteristic

Appearance: soft and creamy foam, very persistent; fine and continuous perlage.
Colour: pale pink.
Aroma: fresh and elegant; hints of red fruits, candied notes and a delicate aroma of lime blossom.
Taste: soft and enveloping, mitigated acidity; elegant tannic notes due to maceration with Pinot Noir skins.

Ideal with tomato-based dishes and, in an original way, with pizza.
Serving temperature: 6–8 °C
